Why is this “te quiero más que tú a mí” and not “te quiero más que me quieres”?

There is in fact a parallel translation, which is close to the one you suggest: “Te quiero más de lo que tú me quieres a mí.” Your suggestion would not work though, because you should use “más de lo que” when comparing two verb phrases.
