iOS app does not respect the time zone set on website

My day doesn’t tend to end at midnight, so on the website, I would set my timezone to one that’s 5 hours behind me so that my cards reset at 5 am, which worked great for me because there’s no more need for me to rush for an arbitrary time limit to do my reviews for the day.

However, in the app, it seems to follow the device time.

Could we make the app follow the time zone set on the profile? Or better yet, allow users to change it so that it doesn’t end on midnight…

As far as I know, the Android app behaves the same.

Addition: Actually, I think the most elegant solution would be to make the cut-off time configurable; having to use the time zone for this purpose is a kludge. It doesn’t work well with the switch to and from DST, for example.
