Is the English translation correct?
Well, pillar means “catch”, often with the implication of surprise or embarrassment, so “spotted” is at least close. But “caught stealing cookies” would have been my obvious choice of words.

In this sentence, the important verb is to steal, so any other verb that goes with it works well.

Fue pillado(sorprendido, cogido, visto, atrapado……) robando galletas.
