Unlike English ‘hide’, ‘esconder’ cannot be used intransitively (¿está escondiendo qué?).
You can say ‘se está escondiendo’ or ‘se esconde’ but these can mean ‘the cat is getting/gets into hiding’. ‘El gato está escondido’ matches the English better. I think ‘se esconde’ is acceptable.
