Gramatically, probably yes; semantically, I am not so sure
I was thinking about this, the thing about “odió” is that it would refer to a specific instance, while “odiaba” states his hatred for spinach in general, and so, I was thinking that we were lacking some context to determine if it was the one or the other. However, I realized that the english sentence said “the spinach”, and had it been about the kid and his antipathy to the concept of spinach, there would have been no “the”, so the english sentence is probably a retailing of a specific moment (for which we are lacking the details of what spinach it was he hated). In that case, “odió” is not only possible, but probably even the better form (although I would have probably said “no le gustaron (nada) las espinacas”)
