what is more common, to say “jesteś mi winien/winny…” or “wisisz mi…” ?
Wiktionary says wisieć, in this context, is of colloquial use.

For small things like a beer, definitely wisisz mi is more common. jesteś mi winien/winny sounds like you’re gonna go to prison if you don’t give it back to me to me, it might be used as a joke though
