Why does “alle” applies to “wir” and not to “es”?
How should I say it if I mean “we knew everything”?

Then it would be “alles”:

alle - all the people / all the things
alles - everything

“Wir haben alles gewusst.”

There is no “es” if you use “alles” (everything).

If you mean “everyone” (alle), you can reorder the sentence. Both are right:

  • Wir haben es alle gewusst.
  • Wir alle haben es gewusst.
