I want one sandwich.

I don’t understand why this is “one.” Usually we say “one” when we mean “not another number.” But this is actually the problem that speakers of romance languages have with English but the other way around.
Example “I received one email from my boss this morning that was funny.”
“How many emails did you receive? Were there not funny ones?”
“No, he only wrote me one email. And it was funny.”
“Ok. You received an email from your boss, then.”
Yes, I received one email from him.

Hi. I would have translated this as “I want a panino”. I would say “Un panino, per favore, solo uno”. A panino please, just one. Probably a translation error unless a madrelingua has more info.

Yeah, I think you should be able to put “just” or “only” before and it shouldn’t change the meaning.
