why “wood” and not “iron”?

Ciao. I think it was an ancient belief that spirits inhabited wood, so people touched or knocked on wood to prevent the spirits from spoiling their hopes and aspirations.

I don’t know if you would know it, because it’s quite old, but to me one of the most well known usages of the expression is in the chorus of this song
