This is what you’ll see in: standard written Russian, news, books, exams, careful and educated speech
If you’re teaching, being examined, or aiming for polished Russian, masculine is the safe choice.
The reality (everyday speech) is that in colloquial spoken Russian, many people use neuter:
ко́фе го́рячее
вку́сное ко́фе
This happens because the ending -е strongly “pulls” it toward neuter, speakers subconsciously align it with words like молоко, какао. This is not considered illiterate in casual speech anymore but it still sounds informal and would be marked as a mistake in formal contexts
Bottom line:
Masculine = correct, standard, always acceptable
Neuter = common, conversational, informal
Feminine = no, never
