人生の中であらゆる機会を sounds unnatural. 機会 + 利用する is understandable but not so good. My alternative translation is:
私たちは人生のあらゆる機会を最大限に活用すべきです。（わたしたちはじんせいのあらゆるきかいをさいだいげんにかつようすべきです）
You can replace 人生の with 人生における, but 人生の is clear enough and concise.
The differences between 利用する and 活用する are
- 利用する is “to use something for other purposes”, or “to use something for your own sake” (manipulative)
- 活用する is “utilize something for the original purpose” or “to leverage something and maximize the potential”
