Let’s be honest.
“Cerchiamo di essere onesti” in my view looks more like a suggestion i.e. “let’s”. “Siamo onesti” has a different meaning and translation.

Andiamo alla spiaggia!
I would translate “cerchiamo di essere onesti” with “Let’s try to be be honest”.
That implies that is is difficult to be (openly) honest whereas “Let’s be honest” is a much straighter demand.
In spoken Italian I would maybe expect a typical monosyllable added:
“Siamo onesti, eh.”
