“zbyt” should not be necessary for this sentence. It should just be “Nie mam dużo czasu.”
I think you can say it and shouldn’t be regarded a mistake, but I agree that if you don’t say it, the meaning of the sentence stays the same. “Zbyt” just puts emphasis on what follows.
