which is most common? w chemii? or z chemii? I’ve seen several examples with ªz matematyki" in the same context, and this is the first time i’m seeing the preposition “w” being used.

“Z chemii” is definitely more common.
“W chemii” sounds like a too literal translation of “at chemistry”. You’d be understood if you said that, but it’s not really natural in Polish.
We use “z” with school subject: “słaby z chemii”, “dobry z matematyki”, “średni z języka polskiego”, etc.
With life skills or professions, we use “w”: “dobry w gotowaniu”, “zły w prowadzeniu samochodu”, “świetny w piłce nożnej”, “szybki w rozwiązywaniu problemów”, “doświadczony w podróżowaniu”, etc.
