I don’t see the difference between “Nehmen Sie sich, was Sie wollen” versus just saying “Nehmen Sie, was Sie wollen”. Are they equivalent, or does “sich” somehow change the meaning here?

No difference.
One might argue, that you cannot say “Nehmen Sie sich …” if the person will take the things for someone else, but I doubt that anybody will differentiate.
