Isn’t that more like “… which man …”?
For “wether” I expected " se un" or maybe “se qualunque” .

Agree MRgK. I read it as “I wonder which man could live sleeping only two hours a night”. Yes, whether = “se” feels more natural.

Is “potrebbe” correct or should it be “possa” since the lead-in is “I wonder”?

"Mi chiedo se un uomo…’ e ‘mi chiedo quale uomo…’ sono entrambe corrette. Il significato è sostanzialmente lo stesso, anche se c’è una leggera differenza di ‘pensiero sottinteso’:
1- mi chiedo se un uomo… = penso che non ne possa esistere nessuno
2- mi chiedo quale uomo… = ipotizzo che ne esista qualcuno e mi domando che tipo di uomo potrebbe essere
