Is this some random spelling that has been pulled in from a website somewhere or is it representative of mechanism(s) used in English to indicate that the plural from of a noun may be applied as needed?

It’s a common method to stay ambiguous/inclusive about the sex of the person referred to.
Mein Ex = male
Meine Ex = female

And yes, it’s also common to use it for singular vs. plural.
