FWIW, it uses the same structure as the English sentence.

It does? In English the plural of iris is irises or iride, but in Italian the plural of iride is iridi. Shouldn’t it be Le iridi dei suoi occhi erano blu?
Now you’ve got me all confused. But I still claim that “L’iride dei suoi occhi era blu” is a direct translation of “The iris of her eyes was blue”. I don’t think it wrong to use the plural, though.
