Do you always have to use “le” in front of “Professeur Hudson” ? So to say “I saw professor Hudson”, you say “J’ai vu le professeur Hudson”?
in France we typically use “le” before titles such as docteur and professeur, unless you are addressing the person directly:
J’ai vu le professeur Hudson.

Serez-vous des nôtres demain soir, Professeur Hudson?
One exception I can think of is “Maître”, which you would use to address a lawyer or public notary.
“Maître” does not require an article:
Maître Dupont est un avocat réputé.
