The table was covered with paper.

I am trying to see the difference between “coperto” and “ricoperto”. So far I can tell that in the sentence “Abbiamo coperto 100 km in macchina prima che facesse buio” you can not substitute “coperto” with “ricoperto”, but in other examples they are substitutable. Am I correct or not ?

You are correct.
“Ricoprire” literally means “to cover again”, but it is often used as a synonym of “coprire”. I don’t think you can use it figuratively however.
