Prosciutto crudo is flavorful and seasoned.

The current cloze makes no sense​:face_with_peeking_eye::dotted_line_face::face_in_clouds: “Stagionato” means “aged” (e.g., of cheese or wine)… i mean… like… this word must have slipped in here because of its relation to “stagioni” (the seasons [of the year]) but I’m just not seeing how.

Two acceptable replacements for the cloze: “condito” (seasoned) or “speziato” (spiced). Nothing else needs to be changed.

I barely know any italian, so my opinion here can be next to irrelevant, but, taking your translation of “stagionato” as “mature”, I feel it seems ok to have it translated as “seasoned”…
I mean, to season, can, as you say, mean “to add something to give it flavour”, but it can also mean matured (even if on the wiktionnary the example is about wood, I feel ham could also fit the description), or, with people, experienced. In that regard it seems to match the meaning of “stagionato” you mentioned, doesn’t it?

I agree with @TheMightyDolphin that “seasoned” can in some circumstances be used as a synonym for aged or matured.

As regards the translation “seasoned” <-> stagionato, then Wiktionary states that these are valid translations.

If you select the English Wiktionary entry for stagionato you get the following definition which includes a translation of “seasoned” under entry number 1 -

stagionato (feminine stagionata, masculine plural stagionati, feminine plural stagionate, superlative stagionatissimo)

  1. seasoned, mature, ripe, aged
  2. elderly, aged, long in the tooth

If you look at the Italian Wiktionary page for “seasoned” you get the translation of stagionato under entry number 2 -

Aggettivo

seasoned

  1. insaporito, condito
  2. stagionato, invecchiato
    …

So, if you consider Wiktionary to be a generally reliable reference (as I do) then this is certainly a reasonable translation.

Our madrelingua says “È corretto, anche se ridondante : tutti i prosciutti crudi sono stagionati. Quello che può variare è il tempo di stagionatura”.

(“It is correct, even if redundant: all raw hams are cured. What can vary is the maturation time”…)
