Why is ‘nyttigt’ in singular when ‘grönsaker’ is in plural? You wouldn’t say ‘grönsaker är grön’.

My guess would be that here nyttigt is acting as an adverb, and so doesn’t have to agree with the noun.
I think that, if we were talking about some specific vegetables (like, those which are on the table, or whatever), and so, have them be definite “grönsakerna”, then “nyttig” would probably be an adjective. In that case it would follow the rule you aluded to, and be “Grönsakerna är nyttiga”

The way I see it, this is another way of saying “Det är nyttigt att äta grönsaker” or “Att äta grönsaker är nyttigt”, so nyttigt conceptually refers to the eating. If you wanted to point out some particularly healthy vegetables, you would say “De här grönsakerna är nyttiga att äta”, though.

Added: It just occured to me that this is the natural answer to the question "Vad är nyttigt att äta?’.
