Have to say I’ve never seen or heard an “s” on cowboy and have always accepted that it is the Italian way, avoiding the dreaded “S” as in uva and uova. Trusty translators all give “cowboy”.

No doubt that is the way people really use it. It sounds like real usage has left the dictionary behind! And since Italian doesn’t use s- endings it is no doubt easier to use “cowboy” for both singular and plural.
