I think this might better translate to one of these:
- “He is the last person to do such a thing.”
- “He is the last one to do such a thing.”
Maybe your second proposal is a bit nearer to the German sentence.
However the official translation is not bad, because the German sentence definitively concerns a man.
Otherwise it would be
“Sie ist die Letzte, die so etwas tun würde.”
And if you wanted to formulate neutral, you could say:
“Das ist die letzte Person, die so etwas tun würde.”
