I think “would be saying too much” matches the best.
“might” feels like there are doubts whether it is actually too much or not, while “wäre” does not. It just makes it dependent on a condition, but if that is met, then it’s definitively too much.
Hasst du sie? - Do you hate her?
Also, “hassen” wäre zuviel gesagt, aber ich mag sie nicht besonders. - Well, “hate” would be saying too much, but I don’t really like her.
The condition it’s about is “if I would be using the word hate”, then it would (definitely) be saying too much.

I was hearing “might” spoken somewhat ironically, as it often is as a gentle reproof. It’s the tone, more a difference in intention, rather than meaning.
