Shouldn’t the english translation be ‘The girl sees the boys’ ?

Nope. “den Jungen” is singular, accusative case. Plural would be “Das Mädchen sieht die Jungen”

The girl sees the boy.

Is it common for a noun to take an ‘n’ in the accusative? I’ve not come across this before, and my dictionary only mentions Junge taking an ‘n’ in the genative.

On rare occasions, some “weak nouns” do. Here are the most common:

der Mensch → den Menschen
der Junge → den Jungen
der Herr → den Herrn
der Nachbar → den Nachbarn
der Kunde → den Kunden
der Name → den Namen
der Held → den Helden
der Bote → den Boten
der Glaube → den Glauben
der Friede → den Frieden
